Unstuffed cabbage rolls are an easy way to enjoy the traditional taste of stuffed cabbage rolls in half the time. No need to roll cabbage leaves or bake anything in this recipe.
Just simply add everything to the pot and cook on the stovetop. Trust me we won't be sacrificing any flavor here!
Most traditional stuffed cabbage roll recipes are based on a Polish dish called Golumpki. It typically uses a ground beef mixture with rice and onions which is rolled into cooked cabbage leaves.
Of course, we won't be using any rice with this keto option. But no worries, because you won't even miss it. This recipe is just that good!
How to make unstuffed cabbage rolls
Ingredients
- 1 1/2 pounds ground beef
- 2 cloves garlic, minced
- 1/2 onion, chopped
- 1 head cabbage, chopped
- 2 (14.5 oz) cans diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 teaspoon white vinegar
- 1 teaspoon Worcestershire sauce
- 1/2 cup water
Instructions:
1. Start by seasoning and browning the ground beef in a large pot or dutch oven with minced garlic and chopped onion. Be sure to crumble the beef as you brown it. Drain any excess grease.
2. Once the ground beef is finished cooking, drain the excess oil and add it back to the pot over medium-high heat.
3. Add in the remaining ingredients, and stir everything together and cover with a lid. Bring to a boil, then reduce the heat and let simmer for about 30 minutes.
Can you freeze unstuffed cabbage rolls?
You can freeze unstuffed cabbage rolls, however, the cabbage will likely become mushy once reheated. I recommend storing leftovers in the fridge instead. Unstuffed cabbage rolls can last 3 to 4 days stored in the fridge.
What to serve with Unstuffed Cabbage rolls
Unstuffed cabbage rolls can be served with cauliflower rice, roasted vegetables, or a salad. I typically enjoy this dish on its own, as it has everything you need for a complete meal.
Recipe Tips and Variations
- Add in a cup of cooked cauliflower rice or regular rice if you aren't concerned about carbs.
- Substitute the ground beef with ground turkey, ground pork, or vegetarian beef crumbles.
- Add in different seasonings. I like to add in seasoning salt, and a dash of cinnamon sometimes.

- Feel free to adjust the seasonings to taste, adding more if you prefer. Enjoy!

I made this recipe today and was quite pleased. I don't know what the recipe lacked, although really good, something was missing from the true "Cabbage Roll" flavor. I changed up the recipe a bit, using ground beef (93/7), substituting 1 can of the diced tomatoes for tomatoes with green chilies(I like spicy), and used 1 1/2 cups of cooked rice. The Cabbage took a bit longer to cook, as it was still tough after 45 minutes, just had to cook a little longer! Really tasty and easy to make. I will make this again. Thanks for sharing.

I almost moved on after reading the ingredient list that showed only 1/2 lb of ground beef, but on the actual recipe area, it show 1 1/2 lbs ground beef. I’m in, but will use Rotel instead of just diced tomatoes. Thanks for a great keto recipe!
