- Ground Beef - a great source of protein, and is used in traditional tacos.
- Beef Broth - This will serve as the base of our soup. Feel free to use low sodium if you are sensitive to salt.
- Cream Cheese - Adds great flavor, and creaminess to the soup.
- Shredded Cheese - We'll be using shredded cheddar, but you could also use Monterey jack or Colby Jack.
- Taco Seasoning - You can use store-bought taco seasoning, or make your own from scratch.
- Rotel - You can find a can of Rotel at your local grocery store.
- Toppings - Top the soup with your favorite keto taco toppings. Some of my favorites are cilantro, shredded cheese, tomatoes, and avocado.
Instructions
Step by step instructions:
Step 1. Start by cooking the ground beef and onions in a large pot. Drain any excess grease from the skillet.
Step 2. Add the cream cheese, Rotel, and taco seasoning to the pot with the ground beef and stir until well combined and the cream cheese is melted.
Step 3. Pour the beef broth into the pot with the beef mixture, and sprinkle in the cheddar cheese. Mix everything together, reduce the heat, and allow the soup to simmer for 15 minutes.
Step 4. Serve warm in small bowls with your favorite low carb taco toppings.
Crockpot Instructions:
You can also make Keto Taco Soup in a crockpot. Here are the step-by-step instructions:
- Cook the ground beef and onions in a skillet. Drain any excess grease.
- Add the ground beef mixture, Rotel, taco seasoning, and beef broth to the crockpot. Cook on low for 6 hours, or high heat for 3 hours.
- Stir in the cream cheese and shredded cheese until it is completely melted.
- Serve with your favorite keto-friendly taco toppings.
How to thicken keto soup
This soup has a great consistency, as the cheese gives a creamy texture. However, if you prefer a thicker consistency, here are a few ways to thicken soup without adding carbs:
- Xanthan Gum - Blend xanthan gum with the hot soup broth in a blender, then stir it into the soup. A little xanthan gum goes a long way, so don't use too much.
- Cheese - Adding extra cheese to the soup, acts as a thickening agent.
- Guar Gum - Sprinkle in about 1/8 of a teaspoon of guar gum to the pot of soup, and stir it in.
Recipe variations
There are several ways to switch this taco soup up to your liking. Here are few different variations that you may enjoy:
- Meats - Substitute the ground beef for ground turkey or mild sausage.
- Make it spicy- Add sliced jalapenos, red pepper flakes, and hot sauce to spice the soup up.
- Cheese - Use shredded a Mexican cheese blend, colby jack, or Monterey jack instead of cheddar cheese.
- Toppings - Top the soup with your favorite taco toppings like avocado, tomatoes, sour cream, cilantro, and extra cheese.
Storage
Taco soup can be stored in an airtight container and refrigerated for up to 3 days. It is normal for the soup to set as it cools due to the cheese solidifying. The soup will return to its original consistency once it's reheated.
To freeze, let the soup completely cool and then store it in an airtight container. Taco soup can be frozen for up to 3 months. Reheat in a slow cooker or on the stovetop.
