This keto taco casserole recipe is an easy dinner idea that the entire family will enjoy. It's loaded with ground beef, topped with cheese, and then baked in the oven. Enjoy the taste of tacos without the carbs!
It's almost time for Taco Tuesday at our home, and this week I made one of my favorite Mexican dishes that happen to be keto friendly. Taco casserole is great for so many reasons. Not only is it super easy, but it does not sacrifice the taste of real tacos!
As a matter of fact, while I enjoy this casserole as apart of my keto diet - my family loves it too! They still use chips to scoop up the casserole when they want to, so they don't mind it at all!
I'm a big fan of casseroles because they allow for easy cleanup, and are great for potlucks and family dinners. This keto taco bake is sure to be a regular on your meal plan!
Keto Taco Casserole Ingredients
Ground Beef - Traditional tacos start with well-seasoned ground beef. I recommend using lean ground beef to avoid excess oil.
Taco Seasoning - This gives it that classic taco flavor.
Green Peppers, Onion, & Garlic - These add an extra layer of flavor, and are sauteed with the ground beef.
Eggs - The egg acts as a binder for the casserole and keeps everything together. Don't worry, you won't even be able to taste the egg once the recipe is baked.
Cheese - To melt on top of the casserole.
Toppings - I like to top the casserole with all of my favorite keto friendly toppings once it's done baking.
How to make keto taco casserole
Start by browning the ground beef with the green peppers, onions, and garlic in a large skillet. Be sure to break up the ground beef with a fork as it cooks.
Once the beef is no longer pink, drain the excess oil out of the beef mixture using a strainer or colander. Add the beef mixture back to the pan, and sprinkle in the taco seasoning. Mix everything together so that the beef is evenly coated.
Next, transfer the beef mixture to a casserole dish and spread it out evenly.
In a small bowl, add the eggs and half of the shredded cheese. Stir the egg mixture until the eggs are lightly beaten, and then pour it evenly over the ground beef mixture.
Mix the casserole a bit to ensure that the cheese gets in between the meat. The egg acts as a binder for the casserole. Don't worry, you won't even taste it.
Top the casserole with the remaining cheese, and bake uncovered for 25 minutes, or until the cheese is melted and bubbly.
Top the finished dish with your favorite taco toppings, and serve.

OMG, I just made this and I have got to say that it is really delicious! The only thing I traded out was the ground beef (I don't eat red meat for my own reasons) and substituted ground turkey. I actually had picked up the ground turkey that was already seasoned with taco seasonings (yeas, there is such a thing). It came out PERFECT!!!! Oh, and I used a couple different cheeses, too.

Thank you so much!

But, I had to wrap it in a tortilla to eat it

Do you need to add water with taco seasoning like normal?
Kay Johnson
No, you don't need to add any watery. It would likely make the casserole watery. I hope this helps. Thank you!

Have you ever made this ahead? I've made the recipe before and we loved it. Thinking I will try to at least brown the hamburger and get that step done so there's less to deal with at dinner time when we have kids home and extra-curriculars going on! Just wasn't sure if it would work to prep the whole thing with the egg mixture.
Ruth Altemus
This casserole is delicious...followed all ingredients and the receipe exactly ....delicious....!! Will definetly make again!
Kay Johnson
I am so happy to hear that. Glad that you enjoyed it. Thank you!

I'm not usually one to leave food reviews but this was so easy to make and absolutely delicious-and it was keto!! I paired it with some scoop for my picky eaters and told them it was like a taco dip and they loved it. I added some jalapeños and garlic hotsauce for myself and my husband and it kicked it up a notch because we love some heat! Thank you so much for sharing
Kay Johnson
I'm sure the jalapenos and garlic hot sauce were delicious with this. I'm so happy to hear that you all enjoyed it. Thank you so much!

Made this today. My ground beef didn't have a lot of grease, so I didn't drain it. Baked in an Emeril air fryer for 20 minutes. Turned out great. I will definitely make it again!
Jerry
Finally got around to making this. It was fantastic! Thank you Kay
Glena
The first time I made this I followed the recipe as written and it was excellent! Tonight I made it but added a can of no salt added diced tomatoes (drained) and 4 ounces of Neufchatel cream cheese. It didn't really bump the carbs up very much. It was soooo good. Thank you so much for the recipe!!

This was delicious!! I eat low-carb, but my husband does not. So I gave him a side of tortilla chips and he ate it as a "taco dip". I love that this is so versatile for a family with different eating habits. Great recipe!!

I tried this recipe on Saturday and it was well received! I will definitely repeat this recipe with more onion, more bell pepper and maybe sliced black olives.

So good! I warmed up a bag of frozen cauliflower rice, added salsa, and poured that in first as a base. I didn't have taco seasoning so I used homemade fajita seasoning. I topped each serving with salsa, queso, and chopped green onion and tomatoes. Delicious easy dinner.
Jessica
My whole fam liked this. My kids ate it in tortillas. I made a bowl with a lot of toppings. Yum and easy.
Kay Johnson
