Ingredients for ham and cheese quiche without crust
Here's what you'll need to make this recipe:
- Eggs - Use large eggs to ensure you have the perfect egg-to-cream ratio.
- Heavy Cream - Heavy cream creates a silky textured quiche. If you prefer a lighter, fluffier quiche, you can use milk instead. You can also use a combination of both.
- Ham - You can use leftover ham or pre-diced ham.
- Shredded Cheese - I used a combination of cheddar and Swiss cheese, but feel free to switch it up. I've tried this with Gruyere, and it tastes amazing!
- Chopped Green Onions - Green onions add great flavor and nice color to the quiche.
- Salt and Pepper - Ham is naturally salty, so we'll just be using a little bit of salt and pepper to amplify the flavors here.

How to make crustless ham and cheese quiche
Step by step instructions:

- Step 1: Combine the eggs, heavy cream, salt, and pepper. Lightly beat the mixture.

- Step 2: Add the diced ham, sliced green onions, and shredded cheeses to a greased 9-inch pie dish and spread evenly.

- Step 3: Pour the egg mixture over the ham mixture.

- Step 4: Bake in the oven at 350 degrees for 35 - 40 minutes. Allow the quiche to set for 20 minutes after baking.
Note: I like to sprinkle a little extra shredded cheese and sliced green onions over top the quiche mixture before baking. This way, the cheese and green onions are evenly distributed throughout the quiche. It also adds extra flavor!
Tips for making crustless quiche
- To prevent eggy quiche, bake at a lower temperature, like 350 degrees, and avoid overbeating the eggs.
- Allow the quiche to rest for at least 15 minutes before eating, so that it has a chance to set. This makes slicing it easier.
- Use a 9 inch pie dish for the best results. Be sure to grease the dish to prevent the quiche from sticking to the pan.
- Don't overbake the quiche. Bake at 350 degrees for 35 - 40 minutes. It is done when the center is just set and slightly jiggly. It will finish baking as it rests.
Storing leftovers
Crustless ham and cheese quiche can be stored in the fridge for up to 3 days. Simply reheat individual slices for about 20 - 30 seconds in the microwave, or warm in a preheated oven at 350 degrees for about 5 minutes.
Crustless quiche can be stored in the freezer for up to 3 months. Store in an airtight container. Allow it to thaw in the fridge before reheating.

Variations and Add-ins
The great thing about quiche is that you can add in your favorite proteins and vegetables to your liking. Here are a few ideas for quiche add-ins:
- Meats - add in crumbled cooked bacon, cooked breakfast sausage, or shredded rotisserie chicken to switch up the protein.
- Cheeses - Gruyere, Colby Jack, Parmesan, and Mozzarella would all be delicious with this recipe!
- Veggies - Add in sautรฉed vegetables for extra flavor. A few ideas are spinach, sliced mushrooms, diced bell peppers, diced onions, or chopped broccoli.
