Keto Green Bean Casserole
Green Bean Casserole is a staple at the Thanksgiving dinner table, and now you can enjoy it without all of the carbs!
For this Keto Green Bean Casserole, we'll be swapping out the canned cream of mushroom to make our own keto-friendly creamy mushroom sauce. Then, we'll finish the casserole with crushed pork rinds.
This casserole pairs perfectly with roasted turkey breast and the other holiday sides you will want to serve.
Green beans are a keto-friendly vegetable. In a half cup, they only contain about 2 grams of carbs, which means you can enjoy quite a bit of this casserole without breaking from your diet.
Ingredients you’ll need
- Fresh green beans: You can also use canned or frozen green beans as a shortcut.
- Butter: We'll be sauteing the mushrooms and diced onion in the butter.
- Mushrooms: If you like, you can omit these, otherwise you can use your preferred variety.
- Diced Onion: The onion adds extra flavor. You can omit these if you prefer.
- Heavy Cream: Heavy cream is a fat bomb that provides plenty of energy and a luxurious texture.
- Chicken Broth: Chicken broth adds extra flavor and helps with the consistency of the sauce.
- Cream Cheese: For added creaminess and extra fat and protein, cream cheese is a must.
- Cheddar Cheese: You can use either mild or sharp versions of cheddar cheese. You could also play around with some other cheeses if you prefer, but just know it can alter the flavor.
- Seasonings: This recipe uses salt, pepper, garlic powder, and onion powder.
- Pork rinds: These provide a crispy topping similar to fried onions with little or no carbs.

What to serve with
Keto green bean casserole makes the perfect side and pairs well with a lot of the fixings for Thanksgiving dinner. Some pairing suggestions include Thanksgiving turkey, ham, cornish hens, baked chicken legs, and turkey wings. This casserole will also pair well with your favorite traditional Thanksgiving side dishes like collard greens, mashed cauliflower, and roasted brussel sprouts.
Can this be made ahead of time?
Yes! You can make this recipe ahead of time to save time on Thanksgiving or when making any dinner. Simply follow all of the instructions up until you add the pork rind topping. Then cover the dish with plastic wrap or aluminum foil, and place it in the fridge. You can then bake it when you are ready.
I recommend making it fresh if you can. This helps ensure the beans maintain at least some crispness to them.
If you do make it ahead, make sure to add the topping right before baking. This will help ensure it gets nice and crispy.
Storing and reheating leftovers
You can store leftovers in the same dish you bake the casserole in. Just make sure to cover it tightly with plastic wrap or aluminum foil prior to storing.
When you are ready to reheat, you can either reheat a single serving for a few seconds in the microwave or place the dish back into a warm oven set at 350 and cook until warmed through.
You can store leftovers for about 3 to 4 days in the fridge.
