Season the chicken with salt and pepper. Then cook in olive oil for about 7 minutes on each side. Set aside.
Sauté garlic and chopped tomatoes in butter until fragrant. Stir in heavy cream, scraping any brown bits from the bottom of the pan.
Next, stir in the grated parmesan and seasonings. Add chicken back into the pan, along with spinach. Then allow it to simmer for about 5 minutes.
